An allergen menu is a detailed breakdown of the 14 mandatory declarable allergens—such as gluten, crustaceans, eggs, fish, peanuts, soy, milk, nuts, celery, mustard, sesame, sulphites, lupin and molluscs—present in each dish you serve.
