Weigh and list every ingredient in the recipe

From the exact weight of the raw patty (180-200g) to the grams of lettuce, tomato, and sauce. Log everything into your costing sheet.

Assign the real cost per gram or milliliter

Divide the purchase price by the net weight. For example, beef at €9.50/kg equals €0.0095/g. Do this for every single ingredient: bun, bacon, cheese...

Sum the total cost and compare to your sale price

Ingredient cost A + B + C. Add shrinkage percentage if needed. Divide the total cost by the menu price (excluding tax) and multiply by 100. That's your actual food cost percentage.
