How to calculate pizza food cost step by step
List every ingredient and its exact quantity
Note down each component (dough, mozzarella, sauce, pepperoni…) and weigh the actual amount you use per pizza.
Work out the cost of each ingredient
Divide the purchase price (per kg, litre or unit) by the quantity you use. Account for every cent.
Turn it into a food cost percentage
Add up all ingredient costs, divide by your selling price and multiply by 100. That’s your live plate cost.
