1. Costs that follow your data
From Mise Essential: preparation sheets, supplier prices, ingredient losses and nested intermediate preparations. Updating a price changes dependent costs.
United States · English · Costs and operations
A new purchase price changes theoretical production cost. COGS needs period-level data instead. This case matches the Spanish version so the team can compare numbers with the same units and assumptions.
Business management from costing to purchasing, inventory and profit & loss, depending on plan. Miselup is not a POS, payroll or fiscal invoicing system.

Use finite nonnegative quantities and prices, yield above 0 and up to 100, positive whole portions and a positive selling price.
Batch cost$150.00
Cost per portion$3.75
Theoretical food cost25.00 %
Formula: useful quantity × purchase price ÷ (yield / 100). Divide total by effective portions; divide portion cost by pre-tax selling price for food cost. Labor, energy, logistics and fixed costs are excluded. This is not net profit or period COGS.
This worksheet explicitly uses kilograms. Convert invoices in pounds first: 1 lb = 0.45359237 kg. Do not combine a price per pound with a quantity in kilograms. The worked resource includes both units; it does not claim the app converts every invoice automatically.

The FDA Food Code is a model adopted by jurisdictions. The nine major federal food allergens are not identical to the EU’s fourteen groups. Ingredient calculations cannot demonstrate the absence of cross-contact.
Mise Pro supports temperatures, deviations, corrective actions and traceability. Mise Pro HACCP adds prerequisite and process records and a draft plan for the business to review and sign.
Outside Spain, records use Codex and operator criteria. There is no validated national regulatory adaptation or certification. Ingredient allergen calculations cannot certify absence of cross-contact.
