HACCP prerequisites and verification: cleaning, pests, water, training and allergens

How to record cleaning, pest control, water, training and allergens, how often each one is due, and how to declare and record your plan's verification.

Updated on October 19, 2026

Which prerequisites can I record in Miselup?

Prerequisites are the support programmes behind your food safety system. These ones have a capture form today:

Other support programmes, such as supplier evaluation, facility maintenance or waste management, don’t have a capture form yet.

Recording prerequisites requires the Mise Pro HACCP subscription. Mise Pro only records temperatures. Reading and printing what’s already recorded never depends on your plan.

Where do these controls come from, and how often are they due?

When you activate the plan with the suite, its control points are created. In Spain, the template gives them a starting frequency:

ControlStarting frequency
Cleaning and disinfectionDaily
Pest controlQuarterly
Staff trainingYearly
Allergen controlEvery six months
Water controlWeekly
Goods receivingPer goods-in

These are template values, not legal deadlines: adjust them to what you actually do. Outside Spain (CODEX), the frequency stays pending until you declare it: until then it creates no gaps and the plan can’t be signed.

To change it, the account owner or an administrator presses «How often» on the control point: frequency, days, window, grace period and «Why it changes». It applies from today, and the document prints what applied before. With a signed manual you can only monitor more; monitoring less needs a new edition.

Anything due that wasn’t recorded shows up in «Due today» and can trigger an email alert.

How do I record cleaning, water or allergens?

  1. Go to «HACCP» → «Records».
  2. Under «Control points», find the control’s card and press «Record».
  3. Fill in the fields. Required ones are marked.
  4. Optionally, add «Notes (optional)».
  5. If there’s a deviation, fill in «Corrective action (if out of criterion)»: what was done with the product and who decided it.
  6. Press «Save record».

The server works out the verdict against the criterion in force.

Your team can also log these from the team portal, in the «HACCP» section.

How do I record a pest control report or a training certificate?

These are documentary records: the paper’s date counts, and they can’t be saved without the document.

  1. On the control’s card, press «Record».
  2. Fill in the fields.
  3. Attach the file under «Document (report, certificate or lab result)»: a PDF or a photo (JPG, PNG, WebP or HEIC), up to 8 MB.
  4. Set the «Document date». It can’t be in the future.
  5. If the document is over 30 days old, fill in «Reason for late entry» (15 to 2000 characters). The original date, the entry date and your explanation are all kept.
  6. Press «Save record».

These records are made only from the dashboard. In the portal, cooks see the note «This record needs a document attached, so it is done from the dashboard.»

Why does a prerequisite say «No criterion»?

Because the control point has no criterion to judge against: its card shows «no criterion defined», and each record is saved but doesn’t prove conformity.

The owner or an administrator fixes this with «Set criteria». For pests, the sighting is judged with «Proven by a “no” (a “yes” is the finding)»: a “yes” opens a deviation. More in Adding equipment and control points.

What is verification in Miselup?

Monitoring is the day-to-day record. Verification is checking, every so often, that the system works. Miselup has four types:

How do I set up my plan’s verification?

It’s declared in the plan draft, before signing. Only the owner or an administrator, with the Mise Pro HACCP subscription. If your manual is already signed, press «Create new edition»: the verification already declared is copied to the draft for you to review (manual editions).

Under «HACCP» → «Records», inside «Review the draft before signing», find «Plan verification and validation» and open «Add a verification procedure»:

  1. Choose the «Verification type» and type the «Control name».
  2. Describe the «Procedure and scope» and the «Acceptance criteria and basis».
  3. For a control verification, pick the «CCP being verified». For a probe, if a catalog tolerance applies you choose «Applicable catalog tolerance and source»; if none applies, you enter the «Operator’s declared tolerance (°C)».
  4. Choose the «Frequency declared by the operator»: weekly, fortnightly, monthly, quarterly, every six months or yearly. No legal cadence is set by default.
  5. Fill in the «Responsible person», their «Role» and the «Basis of the operator’s criterion».
  6. If you have it, add the «Declared validation evidence».
  7. Press «Save declaration in the draft».

Saving creates its control point with that frequency and its criterion: yes/no answers are accepted with a “yes”, and the probe is accepted if the deviation doesn’t exceed the tolerance. The declaration is signed with the edition.

How do I record a verification?

Like any other control: «Record» on its card under «Control points». Each type asks for its own fields: the system review asks for «Period and scope reviewed», three yes/no answers and «Evidence and conclusions of this check».

For the probe you identify the instrument, reference and method, then type the «Probe reading» and the «Reference value», and Miselup works out the «Absolute deviation (calculated)». A “no”, or a deviation beyond tolerance, comes out as «Deviation» and needs a documented corrective action.

How does verification show up in the manual and the report?

Report and corrections: The record book: reading it, printing it and correcting it.
